It’s the last bank holiday for a while and that definitely calls for a tasty treat! Keep the munchies at bay this Monday and bake along with Katie Bear!
STEP 1 BAKE
Get the rolling pin out and turn the oven on. Our recipe below only uses three ingredients and is easy-peasy to do. If that still feels like too much effort, grab a packet of digestives from the shop and jump to Step 2! We won’t tell!
3 INGREDIENT BISCUIT RECIPE
200g unsalted butter, softened
200g white caster sugar
1 medium egg, beaten
400 g Plain flour, plus a little bit extra for dusting
1. In a large mixing bowl, cream the butter with the sugar until well mixed and just creamy in texture. Do not overwork, or the biscuits will spread during baking.
2. Beat in the egg until well combined. Add the flour and mix gently until a dough forms. Gather the dough into a ball, wrap in cling film and chill for at least 1 hour.
3. Preheat the oven to 190°C, fan 170°C, gas 5. Put the dough on a lightly floured surface and knead briefly, then roll out to 3mm thick. Cut, by hand or with cookie cutters, to your desired shape (we like hearts!) Transfer the biscuits to a baking tray lined with baking parchment.
4. Bake for 12-14 minutes, depending on the size of your biscuits, until golden brown at the edges. Remove from the oven and transfer to a wire rack to cool.
STEP 2 DECORATE
Now it’s time to let the creative juices flow. You can decorate your biscuits however you like – but we would love it if they were CHSF-themed. Maybe you could try a CHSF heart? A Katie Bear? Maybe you would like to celebrate our amazing NHS or draw a rainbow for hope?
